I am starting with this (Gotta love Nigella.)

That recipe is very similar to one that I make using dried cod (bacalao). Sounds delicious.
PeggyC, Yes we also make a French dish with the fancy name of "Brandade de Morue" which is almost exactly the same as the mashed potatoes with salt cod my grandmother made on the farm in the midwest!
I have one small portion of the very tasty fish pie left over and I am going to try another sugestion I read. I will pulse it in the food processor, add a few herbs, roll a few patties in bread crumbs and fry them up like croquettes. Perfect for lunch on this frigid day.

How long do you soak the bacalao to remove the salt?

Overnight, with a number of rinses.
Sounds about right. Tough to find real bacalao in central CT, though, so it's been awhile. I wonder if the nearest Whole Foods carries it?
My Brit friend uses smoked salmon and it's fab. Much better than regular salmon.
this is a great idea. I never heard of this! Almost like a cross between a fish chowder and a pot pie, but topped with potatoes. Easy enough for me to make gluten free too. I'll definitely have to try a variation.

Hmmm. One time, we didn't rinse it enough and it was too salty. Another time, maybe too much and it was without taste.
The rinsing isn't an exact science, since you can't know how much salt was used in the drying process.
I made a pie once and found it rather bland, sadly. Now my Brit friend makes it with smoked salmon and it's fab.

I am searching for a tried and true Fish Pie or Fisherman's Pie recipe. (A fish version of Shepard's Pie.)
I have found a few recipes online but they seem a bit too fancy and not as "homey" as the versions I was served in the UK. I don't think the ones I had included shrimp for instance...
