Seder menus: something new with potatoes and pumpkin??

We're attending Seder with about 25 others. I've been asked to do the veg, and our hosts are supplying the raw potatoes and pumpkins.

I'm tired of just serving roasted/baked veg. The main course is a huge salmon in ginger-garlic sauce. Any ideas on what else we can do, that's yummy and new?

Maybe add a little Matzoh and make a yummy dessert?

I was half-thinking about kugel originally, easy to serve, pretty to make and I have lovely dishes I never use. This crowd tends to have a kugel of some kind whenever they gather. Any suggestions for variations?

oh oh I asked my greengrocer to please get me a piece of fresh horseradish root for the Seder plate... today I collect a 1kg (2.5lb) bag!!!

It's a noxious weed here, so difficult to grow commercially. You can in other States, but it's not worth the bother. The funny thing is the price ($50). Guess it reflects the demand... I'm sharing with others, it makes sense.


oh and there's a white quinoa/potato starch mix you can make that's apparently a tasty substitute for hummus, if you have allergies or are that concerned about dried pulses.
