Purchasing a Turkey
You can order a fresh turkey in a specific size range (e.g. 18-20 pounds) at Ashley market. I've never asked them to spatchcock the turkey, but I don't see they wouldn't.
Kings also has fresh turkeys and they are very good. You order them a week or so in advance and pick up Tues or Wed. I'm sure they'll spatchcock it for you.

At risk of sounding like a complete idiot....How do I purchase a turkey for Thanksgiving?
I am hosting 16 people. I know that I could get a fresh turkey or a frozen turkey and that I would like a 20-pound turkey. How do I make sure I get the size I want - especially if it is frozen?
I want to spatchcock the turkey. If I go fresh, do I ask the butcher (?) to do it for me?
