Sometimes the corned beef comes in a vacuum pack with the spices in a marinade - is that the case? If so, just dump the contents of the vacuum pack in your pot.
If it's just that the packet was left out, toss in some peppercorns, dill, and salt, and it will taste "close enough." I make "corned beef" this way during other times of the year when I can't find it anywhere (i.e., any month other than March). Also I find store-bought corned beef too salty most of the time, so I actually prefer my own - though my family doesn't.
I think maybe it was vacum packed in marinade, but it didn't have any spice ingredients listed. I read a bunch of recipes and threw in everything but the kitchen sink. The kids won't eat it no mater what and dh will eat anything, so, hopefully we are fine. Sorry Hank, no longer a vegetarian, but I draw the line at eating baby animals. Good idea though.

Thanks Mama, I put in a Guinness. No pickling spice. I thought vinegar might have the same effect? oh well. Once a year I can experiment and force feed the kids something other than pasta, meatballs and chicken nuggets!
