It's time to kick my New Year's resolution of eating right into high gear. I would love to hear what your favorite healthy recipes are. Anyone willing to share?

My favorites are:
Braised Cabbage with Red Beans and Rice
Quick Farmer's Paella
Orzo Pilaf with Peas, Pearl Onions, and Roasted Red Peppers
Pasta and Bean Soup
Lentil and Escarole Soup

You can find some of the recipes by googling the names of the dishes.

If you have a library card from a BCCLS-member library, such as Maplewood or Millburn, check out the new Zinio digital magazine feature. Selection includes lots of well known cooking and food-related magazines. All magazines (about 250 in English) food-related and otherwise can be read for free through the downloadable Zinio reader as part of your library membership. Full instructions can be found through Google or by going to the Maplewood Libreary's home page.

My cardiologist put me on the Mediterranean diet just before Christmas. I found some really good cookbooks on Amazon that Santa thoughtfully left under the tree for meoh oh I'll post the titles when I'm back home from work. I leaned toward this type if cooking already, but now feel more informed about what I'm preparing and eating. Plus I'm feeling so much better after dealing with some health challenges, and I think that even minor dietary changes are a part of that.

Does the mediterranean diet include limoncello cake?

Joan - I'll check out Zinio. Johanna - I am hopeful that an improved diet will have me feeling better as well. Scott -- too much limoncello cake probably got me where I am at today! grin)

One of the cookbooks is "The Complete Mediterranean Diet: Everything You Need to Know to Lose Weight and Lower Your Risk of Heart Disease."

One of my favorite recipies from this book so far is shallot-balsamic vinaigrette it has a touch of maple syrup oh oh I may try pan-roasted salmon fillets tonight.
