I have a mountain of leftover roast chicken. What to do? Kids want something new. Any tried and true recipes out there?
I've done this a couple of times and really like it.

Looks perfect! (I need to cheat and use my leftover pre-cooked chicken however.)

want just a quick and easy way?
shred the chicken and mix it with some cumin and chili powder. mix with a can of black beans, a can of corn (or to go all fancified, some tjs frozen roasted corn) and shredded cheese. wrap in tortillas (i like the whole wheat. they get less gummy) and put in a baking dish. pour some pre-prepared enchilada sauce on top. top with more shredded cheese and bake.
i serve with sour cream and cilantro.

i made this over the weekend. it's great in our house because i can keep some as vegetarian for my daughter.

i make some my boys go crazy over

need to hunt down the recipe-found it on allrecipes.com

you mix
1 can cream mushroom soup
1 c sour cream
1 package taco seasoning
1 c shredded mexican mix cheese

set aside half

add chicken to the remaining mix

put chicken mixture in tortilla and roll
place in baking dish

cover with remaining sauce and cheese

bake in oven 30 to 45 min at 350 or till bubling

best the next day

its not authentic but very kid friendly

Thank you kenboy, they were a huge success in this household tonight (but I am still "angry" with the splitting corn tortillas!)

i'm assuming "splitting" corn tortillas was them cracking because you didn't presoften them?

i hate presoftening tortillas. too much work and too much oil added. instead, i layer them with my fillings, like a lasagna. works beautifully, no cracking, and tastes delish.

for what it is worth, my fav chicken enchilada recipe is a variation on king ranch chicken...

sauce made of cream of chicken soup + tomatillo salsa + milk

filling made of shredded chicken, sour cream, tomatillo salsa, spinach (usually whatever fresh i have left in the fridge, but frozen is fine too), corn, and cheese.

put a tiny bit of the sauce in the bottom of your casserole dish, then a layer of tortillas, and then start building, ending with sauce and then cheese.

yum!

or with sour cream, Enchiladas Swizas! yum - totally coing to try these recipes.

Yes, I should have remembered the tortilla stacking technique, it's how my husband grew up eating enchiladas in New Mexico (with "green not red" chile)! As it happens i have leftover filling so i may try a round two!

Where do you find this sauce here? When I lived in California it was everywhere, but I haven't had much luck here. Thanks.


Check out Fine Fare on Irvington Ave across from the senior citizens building or the Extra on Irvington AVe around the bend as you head toward Irvington.

I might be wrong, but check Target. If not that brand, something similar?

I get it at the Shoprite in Millburn, but they don't always have it.

The Market Pantry brand in Target has really good enchilada sauce. At least the green one which is the only one I use.

I don't know if it has the same recipe on the label, but you can get Hatch Enchilada sauce (green or red) at Whole Foods if you don't find the Old El Paso. I think I find it at ShopRite and/or Pathmark, but maybe not every time. When I first moved to NJ from Texas 25+ years ago there was NO place that had green enchilada sauce and I used to bring it back from Texas in my luggage (fortunately that was before checked baggage fees.) I also used to bring back tortillas and freeze them. But it has gotten better here and I no longer have to import my tex-mex ingredients.

Also, Fine Fare (Irvington Ave near Boyden Ave) and Seabra (Morris Ave in Springfield, between Meisel and Springfield Ave) have quite a bit of hispanic foods, so probably worth a try, although I have not specifically looked for enchilada sauce at those stores.


There is a really good green chili sauce at Whole Foods that I haven't been able to find lately. It comes in a liter-size jar and has a recipe on the side for white turkey chili that I loved. Do you know the brand?
