Princeton's campus is lovely, if you want to consider walking it as an option. Grounds for Sculpture might also provide easy walking and lunch options.
There may well also be more conventional hiking along the canal..I don't remember the name offhand, but is should be easy to find.

Rocky Hill bridge is closed. I work nearby there.
PA near Trenton (Bucks county?) is likely close to the D&R canal along Delaware River. Its an awesome trail from about West Trenton to Lambertville. Nice views of the river, and often wildlife. If you park at Washington Crossing, its a flat walk to Lambertville for coffee/lunch. Would be quite nice this time of year.
