K,
The simplest was to go would be to remove the French doors, removing the framing around the doors (down to studs), order a set of standard sliding doors and pop them in. You could also make the opening smaller, making a single french door at the end of one side of the porch. I would recommend that you select the door yourself so that you are happy with it (i.e some contractors will get the cheapest door possible to save costs).
Screening in the porch is very simple and could be done in a single weekend, the usual suspects (me, Jack, Damian) could come over to help / lend tools. Winterizing it to make it more usable is not that much harder, it depends if you want it to be a three season room or year around (need to run electrical for heating, outlets, etc.).
I would recommend Tico's Carpentry. I was happy with their work and if I wanted something adjusted, they did it with no fuss.
Regards,
RH
I think this is an interesting product to enclose screened porches

I'd like to investigate the possibility of converting our porch into a three-season room, or at the least, adding screens and replacing the original french doors so we can more easily use our porch. The current french doors, though lovely, don't open freely since our floors were replaced, and they were always very difficult to close completely (lots of pushing and shoving) and extremely drafty. Since they are in the middle of our living room, we've had to caulk them shut and add insulating curtains. I'd want windowed doors that are insulated either way.
What type of contractor should we be seeking to help us with the doors and possible screening or construction of the porch?
