Blizzard Menus?

So it looks like we won't be leaving the house tomorrow much.

What are you going to make? Someone mentioned French Toast in the official storm thread, and I definitely think that's in my immediate future. I have half a loaf of Italian bread that's a couple days old.

I think we're looking at a soup and grilled cheese lunch.

I have to come up with a good dinner plan.  Any ideas for something hearty and comforting?  I dread stopping at a store at this point but I would consider it for the right suggestion.

Split pea soup. Hearty and it can be heated up over a candle if we lose power.  I just made a big pot.

I have lots of coarse corn meal... Polenta is in our future!

Split pea soup is also a blizzard favorite in our house...plus an apple pie.

Beef Stew

Meat Ragu

Pot of Chili

(add wine and a fire)

Breakfast is bacon/eggs/homefries.  Big pot of gravy is simmering now for pasta lunches.  Will whip up a batch of classic mac-n-cheese with smokey ham.  Spicy steamed shrimp for snacking.  Chocolate chip cookies for munching, too.

Now that I write that out, sounds like waaay too much food for two of us.  Probably a good thing for the neighbors.  grin

Roast chicken, tiny roasted potatos, and green salad Saturday night; chicken noodle soup Sunday night; wine. More wine. Also maybe a dark stout. Bourbon?

Just made a crockpot full of black beans and andouille sausage.

buttermilk brined Roasted Cornish Hens with wild rice pilaf

Bacon and eggs for Breakfast

Nachos with black beans and guacamole

Nachos are a great idea! I have everything I need for that.

Grilled cheese and tomato soup for lunch tomorrow.

Hot chocolate for post-snow warming up

Spinach orzo soup for dinner:

Probably chocolate chip cookies or brownies for noshing

Im pushing up one possible mid-storm dish (grilled ribeye steak with apple radish vinaigrette and sautéed mushrooms) because I feel like opening a particular bottle of wine tonight. So tomorrow it will be assembling the turkey soup from the stock made Monday from last weekend's roast turkey. I want to make meatloaf though, so Mr. I, my comfort suggestion would be meatloaf with mac n cheese.

I gotta see if we have ground beef but that sounds like it's right up my alley.

Made lamb stew tonight. Tomorrow lunch is left over stew (or chili from earlier this week). Dinner pot roast w/ potatoes.

Wine with all meals, of course!

Soup: Vegetarian 13 bean soup with cornbread (most likely vegan). I'm not vegetarian but my stepdaughters are/were supposed to visit and one is vegetarian. The vegan cornbread is because I don't like eggs and have found flax to be a very good substitute in cornbread.

I have turkey stock in the basement. If I'm feeling cooped up on Sunday, I might make another soup with that.

I actually wanted to make Cassoulet, but didn't have the ingredients on hand and didn't have time to shop.

I have not gotten as far as wholesome dinner menus yet but the dough for my pumpkin cinnamon rolls is rising.

Pulled BBQ chicken in the crockpot. Grilled cheese. Lentil soup. Yum.

Beef Stroganoff in the crockpot today served over egg noodles. First attempt so fingers crossed that it comes out well.

A version of this using thighs is marinating in the fridge for later today and a loaf of no knead whole wheat bread is about halfway through the 18 hour rise!  At least we will eat!

Best Regards,

We live about a third of a mile from the VA Hospital.  It is well lit and has large blinking red lights on top.  It is invisible right now!

Brunch today was chick pea flour pancakes (savory) topped with Carmelized onions and mushrooms and coconut chutney.

Dinner for some of us will be last night's Seabra's leftovers transformed: I took home garlic broth and more than half of our grilled octopus order. I'll make some GF pasta and cut the octopus and the veggies and toss with the sauce.

ill also make shrimp sandwiches, which one of my girls requested.

Just finished brunch - waffles and bacon.  Not fancy but yummy and satisfying.  (And I wasn't the cook!)

Homemade Ramen in a chicken/pork stock base (with lemongrass, star anise and ginger) using leftover roasted squash, chinese roast pork, watercress, kangkung in garlic sauce, scallions, spicy tofu topped with hot chili paste.

http://thewoksoflife.com/2015/09/cumin-lamb/ - using lamb breast -whole foods had it on sale.

roast duck (cooked from KanMan Market) in penang curry

and for the 'amercians' escarole and beans with chicken/pork meatballs

FYI: Golden Valley supemarket (springfield) had Chinese roast pork (Char Sui) and roast duck for sale!  the people working there are very nice once they get to know you and much more helpful that KanMan on Rt 10.

White chili was a very warming & delicious lunch.

With chicken? If not I'd love the recipe! I have a vegetarian white bean chili that's pretty good but I'm always looking for more options!

wow, y'all are fancy.  I'm roasting a chicken later with mashed potatoes and gravy.  Then I'll make chicken noodle soup tomorrow.  Also making meatloaf for sandwiches because I have meat I need to use and will likely make meatballs for the freezer later.

Marinated London Broil with roasted garlic mashed potatoes. Was going to have sautéed spinach or a salad but both bags are part of the Dole recall

Breakfast was my oatmeal whole wheat pancakes and bacon. Lunch is whatever we can scrounge. Dinner will be adobo chicken with rice. Dessert is a new recipe for me: Saint Louis Gooey Butter Cake. Mmmmmcarbs.

same daughter who requested shrimp sandwiches also requested vodka sauce, so I have a pot of marinara simmering. I don't have cream but do have a few cans of coconut cream, which I have found makes a really good vegan cream sauce, so I'll take some of the marinara sauce (I used a giant can of tomatoes) to make it. Then I'll use some of that to make a sort of Chana masala cheat.

Thinking about making Smitten Kitchen's Pretzel Parker House rolls, but I might try the pumpkin cinnamon rolls that @cmarym linked to instead!

Also oatmeal chocolate chip cookies, and a big pot of chili.

we went "light" for breakfast and made muffins. Lunch is old fashioned grilled cheese (white bread, American cheese and butter!) and soup. Dinner is going to be beef stroganoff. We have everything we need for eggs Benedict and mimosas tomorrow morning too!
