I do something similar, except instead of the oil I spray a foil-covered sheet pan with cooking spray.
It works with sweet potatoes, also.
I almost went with a Gordon Ramsay recipe, but you had to parboil the potatoes first. He also had whole garlic cloves and rosemary on the tray as well.

Can you guys tell me what I can tell me the best things to convection bake in my brand new convection microwave?

Looks like I got this before it was placed behind their cooking wall. It's so simple. You also can add chili pepper, garlic powder, paprika or cayenne - whatever spices you with like.
I'm sure fries are really easy if you have one of those new air fryers - but if not try this one out. I did 1/3 of the recipe with one medium potato. It worked out well.
