What to make with 2 gallons of (extra) milk?

Long story but I ended up with two unopened gallons of whole milk.

I am no longer in the mood for chowder (given the spring weather)...any other suggestions?
Pudding?

How about a really really really big bowl of cereal?

That's a terrific answer! But I would make yogurt or paneer. Both amazingly easy.

when I make potato gratin, I boil the potatoes in milk...you could do that too.

I'm with annemarie. I love rice pudding.

I've made both white (farmers) and yellow (mozzarella and cheddar-style) cheeses; fun and a little fiddly but worth the effort.

Or: make a variety of freezable dishes (quiches, ice cream, mash), then do the above suggestions from everyone...

Ricotta is easier to make than mozzerella.

But mozz isn't hard if you are fairly exacting about temperatures.

So many possibilities!

...ice cream, cheese cake from your own cheese... Lots of yummy fresh custard...

We got in the habit of freezing milk. If you have the freezer space, do that until you need it!

I second pickle's suggestion. You can freeze milk.

This. Especially the "no raisins" part.

I would make a white sauce, divided into many portions, and freeze it. Then you can use it whenever to make cheese sauce, tetrazzini, etc. Or just make lots and lots of cheese sauce and freeze that, or just freeze the milk.

Homemade ice cream...I just so happen to be selling a new in box Cuisinart Frozen Yogurt, Sorbet and Ice Cream Maker.

Ooh, why don't you cook it down and make sweetened condensed milk. Wasn't it @jasper who did it in the crock pot?

You can then use that to make rice pudding, fudge. Etc.

@shh, good memory, but I started with sweetened condensed milk and cooked it in the crock pot to turn it into dulce de leche. If you start with milk, I'd guess you need to cook it down with sugar to first get to the sweetened condensed stage, but I've never tried that.

I think a crock pot would be too wet of an environment to make condensed milk. Maybe not. Or it would go straight from liquid to burn. Just a guess.

Oh, YUMMMM. Didn't know you could do that....

Oh! I did it then after I saw what you did!

I started with non dairy (almond of coconut I think) milk and less sugar than called for. There are definitely recipes out there.
