Have you considered bringing up the idea with the Hilton Neighborhood Association? Could be a good way to further their aim of building community in Hilton.
Would you be able to secure meeting space at St. Joseph's? Do they still have the Knights of Columbus building? Partnering with them could possibly eliminate the need for a club liquor license since I believe the Knights of Columbus has/had one.
