beef stroganoff

The impending return of Game of Thrones put me in the mood for beef stroganoff, but the recipe I tried (Pioneer Woman) is really bland. Shouldn't it have tomato paste? Paprika? Please share your favorite.

No and no. Not in my mother's, hers was equally bland. Lol. Don't have the recipe to hand, but it was never a favorite of mine. cheese

My husband just described a beef stew he had tonight in Jerusalem! He said the stew was pretty straight forward but it contained cinnamon and maybe cloves. What made it different was that his serving alone was delivered to the table with a giant mound of chopped fresh herbs to stir into it.
A very Ottolenghi kind of dish grin.

I've become very fond of the parsley/mint/coriander combination in a lot of Ottolenghi recipes! I'm staging a comeback with the turkey zucchini meatballs, after two strikes this weekend, the stroganoff and a fairly wretched "chicken curry" from my beloved nytimes.com/cooking app.

Never tomato sauce but I do use some paprika.

@aes, you are on the right track. There is something about pan-roasting tomato paste that is transformative.

But I wonder if what I am looking for is something more like beef paprikash. (Is that a thing?)

PS @kmk, Clove Gum, clove cigarettes, whole cloves in oranges on the Christmas tree and ground cloves in the sugar cookies. Pumpkin pie spice! All good choices. But no cloves in beef stew. In my opinion.

Are you thinking of Hungarian Goulash?  It has paprika and tomato paste.

I've been thinking you could probably give the flavor a nice boost if you put in dried porcini. Ups the ante on the mushroom flavor in a big way.

Ooh that sounds delicious. I do love beef stroganoff the traditional way. Mushrooms and beef with egg noodles and a dollop of sour cream. Yum! 


A good friend of mine makes yummy beef stroganoff and his recipe has tomato paste.  I have it somewhere ...


Ooh, look at me with my_space. And I might be thinking about goulash, or paprikash.

While the Pioneer Woman my have a big following, her style of cooking and use of ingredients is not the most flavorful.
