00 flour

Who carries it that might still be open tonight? I'm told Whole Foods does, but they don't think they have it. I'll go check, but in the meantime, I thought I'd see if there are other suggestions. Thanks!


Okay, false alarm. They thought they didn't have it, but my husband found multiple options. Pizza dough saved.


We've gotten 00 flour for pizza dough at Ashley Market in the past...


Good to know for future reference. Thanks! I usually go to Mia Famiglia in Millburn, but I forgot to go before they closed today, and my son makes a 48-hour dough. Have to start tonight for Saturday night. 


what the sam hill is 00 flour? super-fine? I don't think I've ever seen it.


Yep. It's a superfine white flour, good for making pizza dough.


Pretty sure this is the brand we bought at Ashley. It does make excellent pizza dough!


In addition to being finer, 00 has less gluten, so it's easier to work with when stretching out the dough


Maybe that would help when making pretzels. I made my first attempt at soft pretzels a couple of weeks back, and I couldn't keep the dough from rebounding back to original size after trying to roll and stretch it out. (I'm  very much an amateur with bread dough.) As a result my pretzels looked more like big dinner rolls, with a vague pretzelly shape. They were still tasty though.


Wonder if shoprite carries it.

db, try letting the dough rest for 20 or 30 min. after you punch it down (or stretch it) before you take the next step.
